Full Day of Eating: Farmer’s Market

I’m still loving the Farmer’s Market, so this full day of eating is inspired by all the yummy vegetables (corn, tomatoes, green beans, potatoes) that are available at the Farmer’s market as we near the end of summer. As always, adjust the portions to meet your macro goals.

Full-Day of Eating Menu

Breakfast

Egg white scramble: ½ cup egg whites + 1 cup spinach, + ½ cup diced red peppers, + 1 ounce goat cheese

½ roasted sweet potato

Snack

Greek Yogurt Parfait: ½ cup greek yogurt + ½ cup berries + 1 oz. Bare Naked protein granola

Lunch

Turkey BLT: 2 slices Ezikiel bread + 4 ounces turkey + 2 slices bacon, + ¼ avocado + 3 slices heirloom tomato

Snack

Strawberry Built Bar

Dinner

4 ounces grilled chicken

Caprese salad: 1 tomato + 1 ounce fresh mozzarella + fresh basil

Corn on the Cob

1 cup steamed green beans + baby potatoes drizzled with 1 tbsp. Olive oil

Macros: 1696 Calories: 127 P, 162 C, 60 F, 30 Fiber
